ranch of San Matias — owned during the 19th century by Don Delfino
Gonzalez — was used primarily as land to grow blue agave. Over time, Don
Delfino started turning his agave harvests into a tequila that, for its time,
was very refined. When he first started having his tequila produced, Don
Delfino limited its exposure by only sharing it with his friends and employees.
As word of his concoction spread across Magdalena and throughout the town of
Jalisco, he found himself no longer able to control the demand.
the demand increase and being an advantageous entrepreneur, Don Delfino started
increasing the production of his tequila to extend past friends and family. It
didn’t take long for tequila production to become the primary purpose of the
ranch, and Casa San Matias was born as a brand of refined tequila.
many of the San Matias spirits, this Reposado is casked for many months in
American white oak barrels, hence the name “reposado,” which translates to
“restful” in contemporary English. The American white oak gives this spirit a
lighter color than some of its sister tequilas.
